informationThis fruity mousse gives a refreshing finish to a meal and at only 1½ Syns on Green and Original, it’s refreshingly low in Syns too! Serves: 4 ingredients1 medium ripe mango method1. Peel the mango using a vegetable peeler. Slice down either side of the central flat smooth stone, and slice off any flesh around the stone. Place in a food processor along with all but 2 tablespoons of the orange juice and blend to a smooth puree. 2. In a mixing bowl, beat together the quark, Canderel and half of the grated orange zest, then stir in the mango and orange puree. 3. Heat the reserved orange juice in a small pan and sprinkle on the gelatine. Stir off the heat until melted. Pour into the mango and orange mixture, stirring well. Chill for about 15 minutes until the mousse base starts to thicken. 4. Whisk the egg whites until they form soft peaks, then fold into the mousse. Pour into 4 serving glasses and chill for a couple of hours until firm. Serve garnished with the remaining strips of orange zest. << back |
