cheesy chips with bacon & salsa

Karen Hardcastle from Basildon sent us this fabulous recipe. “This is really good as a TV dinner" says Karen. "It can be Free on either Green or Original days if you count either the potatoes or bacon as a Healthy Extra, and use reduced fat cheddar as a Healthy Extra ‘a’ choice”.

Our serving suggestion is to enjoy it with a Friday night film!

Serves: 2
Syns per serving: Free on Green, Original and Extra Easy. Add 6 Syns if not using cheese as a Healthy Extra choice

ingredients

396g/14oz new potatoes, skin on and sliced (or as many as you like on a Green day)
Fry Light
170g/6oz lean bacon, finely chopped (or unlimited on an Original day)
1½ medium red onions, finely chopped
a few finely sliced mushrooms and peppers
85g/1½oz reduced fat cheddar, grated

For the salsa
½ medium red onion, chopped
a big handful of cherry tomatoes
1 tbsp balsamic vinegar
1 tbsp jalapeno peppers
small carton of passata
artificial sweetener to taste

method

1. Slice the potatoes so they are about ½ cm thick and place in boiling water. Simmer for 8 minutes. Meanwhile, turn the oven on to 220°C/425°F/Gas mark 7 and pre-heat an oven dish sprayed with Fry Light.

2. For the salsa, chop half of one of the red onions into medium sized pieces and cook in a pan sprayed with Fry Light until soft. At the same time quarter the cherry tomatoes and put them in a bowl, pour the cooked onions on top and add the balsamic vinegar.

3. By now the potatoes should have had 8 minutes. Drain them, pat them dry with kitchen roll and put them in the oven dish. Spray the potatoes with Fry Light and add paprika or chilli powder if desired. Place the dish in the oven and cook for 30 to 40 minutes (turning them every 10 minutes or so).

4. To finish making the salsa, chop the jalapeno peppers and add to the mix. Now top up the dish with the passata, mix well and add sweetener to taste.

5. Finally, chop remaining onion, bacon, mushrooms and peppers very finely and fry them in the pan sprayed with Fry Light. When they are looking crispy, add them to the potatoes. Mix well and sprinkle with the cheese, return to the oven for 5 minutes to melt the cheese, then serve with the salsa.

Karen sometimes adds a little paprika or chilli powder for an extra kick. You could also enjoy some cooling very low fat natural fromage frais as a dip for Free!
