Prepare the fruit: peel, core and finely chop the pear and finely chop 4 of the strawberries. Cover and set aside until required. 2. Beat the egg. Lay one sheet of filo on the work surface and brush with egg. Lay the second sheet of filo on top. Cut the
pastry lengthways into 4 equal strips and then cut each strip in half widthways to give you 8 filo strips. Brush each strip with a little egg. 3. Divide the chopped strawberry and pear between the 8 strips of pastry, placing the fruit at the end of each strip. Fold over at an angle to enclose the mixture, continue folding to form a triangle. Place on a lined baking sheet, brush with the remaining egg and bake for 15 minutes until golden. 4. Meanwhile, make the strawberry drizzle: place the remaining strawberries in a food processor with 2 tbsp of water and blend until smooth. Add 2 tbsp of icing sugar and mix well. 5. Divide the strudels between four serving plates, drizzle over the strawberry sauce and serve dusted with the remaining icing sugar. << back |
