Fruity Tea Loaf

Christine Worrall from Nottinghamshire sent us this tea time treat that the whole family will enjoy. Christine tells us “This moist fruity loaf just 'hits the spot' when you fancy a nice piece of cake! There's plenty to share with others, or, at only 4 Syns per slice it deliciously fits into your slimming campaign!”

Cooking Time: 45-50 minutes

Preparation Time:
soaking time plus 10 minutes

Serves: 15

Syns per serving: 4

ingredients

1 cup of cold black tea
227g/8oz dried fruit
227g/8oz self-raising flour
1 or 2 eggs, beaten
6 level tbsp artificial sweetener (or to taste)

method

1. Soak the dried fruit in the tea overnight or for a minimum of 2 hours.
2. Add all the other ingredients, mix well then place in a 1lb loaf tin lined with baking parchment or greaseproof paper.
3. Bake in a 180°C/350°F/Gas mark 4 oven for 40-50 minutes.
4. Allow to cool slightly before removing from the tin. Slice into 15.
