A toastie makes a quick and nourishing hot lunch, supper or snack.
To make 2 toasties, you will need to two slices of wholemeal bread from a 400g
loaf. Toast the bread on both sides, either in a toaster or under a preheated
hot grill. Do not overcook or the toast will be hard and unappetising - it should
be crisp, a pale golden brown and still slightly soft in the middle.
Note: Don't be tempted to substitute muffins, rolls
or pitta bread, or the Syns will soon mount up. Top the toast with one
of the delicious toppings listed below:
grilled mushroom toastie
Serves: 1 Syns per serving:
Free on Original*, Green* and Extra Easy*
*add 6 Syns if not using bread as a Healthy Extra
Place 4 medium-sized whole mushrooms (preferably open-cap field ones) and 2 tomatoes
cut in half on a grill pan. Spray with Fry Light and grill until tender and slightly
charred. Season with salt and pepper, sprinkle with chopped parsley and place
on top of the toast.
pissaladière toastie
Serves 1 Syns per serving:

Cook 1 small onion in a little chicken stock made with Bovril or Vecon until the onion
is tender and syrupy and has absorbed the stock. Meanwhile grill 1 small red
pepper and 1 small yellow pepper until blistered and charred. Peel, deseed and
cut the flesh into thin strips. Pile the onion on top of the toast and arrange
the peppers in criss-cross strips on top. Halve 7 stoned black olives (1 Syn)
and place in the gaps between the peppers. Season with salt and pepper.
