This salad combines all the great flavors of a classic Club sandwich with a really creamy, tangy dressing.

Ingredients

For the dressing:

½ cup (4oz) fat-free plain Greek yogurt

1 tbsp fresh lemon juice

1 level tsp yellow mustard

½ tsp sugar substitute

¼-½ tsp coarse ground black pepper

Salt

 

For the salad:

4 slices Canadian bacon

1 bag mixed greens

12 baby plum tomatoes, halved

½ hothouse cucumber, halved lengthwise, seeded, and thinly sliced

¼ cup thinly sliced red onion

¼lb sliced lean deli ham

¼lb sliced lean deli turkey

Method

  1. For the dressing: In a small bowl, mix together all dressing ingredients, and season to taste with salt.
  2. For the salad: Preheat the broiler. Place the Canadian bacon on a piece of foil on the broiler-pan rack and broil 3-4 inches from the heat source, turning once, until browned. Remove from the broiler and cut into small pieces.
  3. Put the salad greens, tomatoes, cucumber, and red onion in a large salad bowl and toss to mix well. Slice the ham and turkey into thin strips and add to the salad with the Canadian bacon. Drizzle the salad with the dressing and serve.
