Grape and mulled wine jellies
Use your favourite fruits in this elegant jelly. Satsuma segments, strawberries or raspberries also look lovely.
ingredients
- 225g/9oz seedless grapes
- 1 tbsp finely grated orange zest
- 225ml/9fl oz sweet white wine
- 2 star anise
- 4 tbsp artificial sweetener
- 2 sachets gelatine
- 225ml/9fl oz clear grape juice
- 4 tbsp fat-free natural yogurt
- a pinch of grated nutmeg
method
- Halve the grapes and divide between four glasses. Put the orange zest, wine and star anise in a pan, bring to the boil and simmer for 10 minutes. Remove from the heat, stir in the sweetener and strain into a bowl (reserving the star anise). Add the gelatine to the bowl and stir to dissolve before adding the grape juice and leaving to cool.
- Pour the cooled mixture over the grapes and place the glasses in the fridge for 4-5 hours until completely set. Serve each jelly topped with a little yogurt, a sprinkling of nutmeg and the reserved star anise.
Tip: Agar agar can be used instead of gelatine, if preferred.
