This delightfully cool and creamy dessert comes together in minutes, and tastes like it took all day.

Ingredients

1 package (1oz) sugar-free, fat-free instant vanilla pudding mix
2 cups skim milk
3 vanilla wafer cookies, coarsely crushed
2 bananas

Method

  1. In a medium bowl, whisk the pudding mix and milk for 2 minutes until thickened and smooth. Let stand 5 minutes.
  2. Slice the bananas and layer half of the slices into the bottom of each of four 6-oz custard cups or wine glasses. Spoon ¼ cup of the pudding over the bananas and top each with a ½ heaping tsp of the cookie crumbs. Add the remaining sliced bananas and remaining pudding to each. Top evenly with the remaining cookie crumbs.
  3. Serve right away or cover with plastic wrap and refrigerate up to 4 hours until ready to serve.
