Sausage casserole

You can't beat a good British banger and they're packed into this tasty bake. Tuck into this hearty meal that the whole family will love.

ingredients

  • 4 carrots, 4 celery sticks and 1 onion
  • 1 tsp freshly chopped rosemary and 2 tbsp freshly chopped parsley
  • 11fl oz/312ml stock made with Bovril or Vecon
  • salt and freshly ground black pepper
  • 12 Tesco Light Choices Low Fat Pork Sausages
  • Fry Light
  • 11oz/312g button mushrooms
  • 1-2 tsp artificial sweetener
  • 2 x 400g cans chopped tomatoes

method

  1. Preheat the oven to 190°C/Gas 5. Chop the carrots, celery and onion, place in a large pan with the herbs and stock. Season well, bring to the boil, reduce the heat, cover and simmer gently for 5-6 minutes.
  2. Place the sausages on a baking sheet, spray with Fry Light and bake for 15-20 minutes. Remove from the oven and cut into thick diagonal slices.
  3. Halve the mushrooms and add to the vegetables with the sausages, tomatoes and artificial sweetener. Season well, transfer to an oven proof dish and bake for 10-12 minutes until bubbling. Serve immediately.

Tip: Everyone will love this easy bake! Serve with seasoned turnip mash or with an 8oz/227g jacket potato (taken as a Healthy Extra on Original).

Why not make double and freeze half - making this dish a great standby for days when you don''t have time to cook.

When cooked this dish can be frozen for up to 1 month.
