Having canned or dried beans in the pantry can make life—and weight loss—a little easier. Not only can beans help you serve up a filling, satisfying meal on a family-friendly budget, they’re also super-fast and simple to prepare. Beans contain a lot of soluble fiber, which is what makes them so filling. If you’re cooking with dried beans, you’ll need to give them a nice, long soak. Before bed, place your beans in a bowl with enough water to cover them by three inches. Next morning, drain off the water and place the beans in a saucepan with enough fresh, cold water to cover by about two inches. Bring to a boil and simmer for about 1 hour, then drain.
Prepping canned beans is simpler—just drain them into a colander and rinse under cold water (this will wash away about one-third of the sodium). Then add the beans to a quick and easy chicken salad, or a classic beef chili. Alternatively, you could throw them into your slow cooker.
