Christmas leftover recipe: Holiday ham skillet

Holiday ham skillet supper

1lb. baby red potatoes, scrubbed and quartered
2 cups frozen green beans, thawed
1½ cups frozen pearl onions, thawed
1lb. leftover cooked lean ham, visible fat removed, chopped
½ tsp garlic powder
½ tsp dried sage
Plain fat-free Greek yogurt, paprika and sliced scallions, to serve
- Put the potatoes in a large, nonstick skillet with enough cold water to cover them by 1in. Bring to a boil over a medium-high heat and cook until the potatoes are tender, but still hold their shape, 5 to 7 minutes. Drain into a colander and set aside.
- Lightly coat the skillet with cooking spray and heat over a medium heat until hot. Add the green beans and pearl onions, and cook until they begin to blister, 5 to 7 minutes.
- Add the ham, garlic powder and dried sage, and cook until the ham is heated through. Stir in the potatoes with ½ cup of water. Bring to a boil and cook until the sauce thickens, about 5 minutes.
- Season the mixture with salt and pepper to taste, and divide among four bowls. Dollop each bowl with yogurt, sprinkle with paprika and scallions, and serve.
