Mother’s Day brunch, Slimming World-style

This Mother’s Day, skip the overpriced restaurant brunch and throw a colorful, celebratory brunch at home. With a simple yet tasty menu and a little advance prep, pulling off a spread to say “thank you” to mom is easy and delicious. Even better, with Slimming World’s healthy eating plan, you can prepare a wide variety of dishes the whole family can enjoy, and still keep your weight loss goals on track. From recipe ideas to entertaining tips, we’ve got you covered with the best of the brunch!

Make it ahead

No need to spend the whole brunch cooking in the kitchen. Pop a hearty, ham- and veggie-packed frittata in the oven ahead of time for an easy, crowd-pleasing meal that leaves you free to spend time with family and friends. Even better, the frittata tastes just as good served at room temperature as fresh from the oven. Change up the veggies based on what’s in season—asparagus, peas, and leeks are all delicious at this time of year.

Bring out the “lunch” in brunch

While breakfast-y options are plentiful on brunch menus, providing one or two lunch-leaning dishes can help round out the meal while catering to those who may have already had breakfast that day. Try a satisfying pasta- or grain-packed salad, like this one studded with quinoa, crunchy chopped vegetables, and briny feta, which is impressive enough for company and hardy enough to hold up throughout the day.

Finish with something sweet

It wouldn’t be brunch without a little something sweet to balance out all those savory dishes. For a super simple treat, jazz up some plain fat-free Greek yogurt with cinnamon and no-calorie granulated sweetener, then serve it alongside a homemade fruit flower bouquet (shown above). To make, simply cut flower shapes of different sizes out of melon and pineapple slices. Thread green grapes onto skewers to make stems, then arrange the fruit flower shapes as petals, with blueberries for the centers. Add strawberries on skewers for even more color.
