St Patrick’s Day the Slimming World way

Guinness gives St Patrick’s Day twist to hearty beef stew. Lean meat (visible fat removed) and plenty of veggies make it extra-filling and slimming-friendly. Even better? The stew simmers away in the oven unattended, making it a great choice for gatherings (and the house will smell amazing).
This traditional side dish would pair perfectly with the stew, and combines two classic Irish ingredients: potatoes and cabbage. Simply boil potatoes and cabbage together until tender and then mash. While sturdy green cabbage is most often used, delicate napa or even vitamin-rich kale can easily be swapped in instead.
Emerald Isle dip
If there was ever a time to go green, it’s now. To make a tasty and festive dip, separate the leaves from two bunches of basil and add them to a blender with 1 cup plain fat-free cottage cheese, 1 garlic clove, 1 teaspoon lemon zest, and 1 tablespoon lemon juice. Blend until smooth, then season to taste with salt and pepper and serve with green veggie crudités.
You can’t beat the rich, adults-only taste of an Irish coffee. Add 2 tablespoons Irish whiskey and 1 teaspoon sugar substitute to ½ cup hot black coffee, and top with 2 tablespoons fat-free aerosol whipped topping, for a Slimming World version that’s positively saintly!
