Treat Mom to a special breakfast this Mother’s Day

Baked cinnamon French toast
Fresh fruit topping adds a deliciously sweet and juicy touch to fiber-rich whole wheat bread.

4 servings
Preparation time: 5 minutes
Cooking time: 25 minutes
Total time: 30 minutes

Cooking spray
4 large eggs
½ cup fat-free milk
2 tsp. sugar substitute
1 tsp. vanilla extract
½ tsp. ground cinnamon
8 (1-oz) slices whole-wheat bread
Plain fat-free yogurt and mixed berries or other fruit, for serving


  1. Preheat the oven to 400°F. Spray a large rimmed baking sheet (or 2 smaller sheets) with cooking spray.
  2. In a pie plate, beat the eggs with a fork. Beat in the milk, sugar substitute, cinnamon and vanilla. One at a time, dip a slice of bread into the egg mixture, turning it to let it soak into both sides. Place on the prepared baking sheet. Evenly spoon any leftover egg mixture on the bread slices.
  3. Bake for 18-20 minutes, turning slices once (use a metal spatula as they might stick slightly), until the toast is browned. Remove from the oven and cut each slice in half diagonally. Arrange 4 pieces on each of four heated plates. Top each with some yogurt and fruit.

Saucy lemon crepes
These fluffy, folded crepes are a delightful dessert as well as a sweet breakfast!

Preparation time: 5 minutes
Cooking time: 55 minutes
Total time: 1 hour

Finely grated zest and fresh juice of 2 lemons (2 tsp. zest, 6 Tbsp. juice)
⅔ level cup sugar substitute
1 level tsp. cornstarch
1 level cup all-purpose flour
1 cup skim milk
3 large eggs, beaten
1 tsp. vanilla extract
Cooking spray
6 Tbsp. plain fat-free Greek yogurt, for serving
1 level Tbsp. confectioners’ sugar, for dusting
A small handful of fresh mint leaves, to decorate


  1. First make the sauce: Place ⅔ cup water, lemon juice, 2 tablespoons sugar substitute and the cornstarch in a small pan and whisk to combine. Bring to a simmer over medium heat and then simmer for 1 minute. Stir in 1 teaspoon lemon zest. Set aside and keep warm while making the crepes.
  2. Combine the flour, remaining sugar substitute and a pinch of salt in a bowl. Mix in the milk, eggs, 1 teaspoon lemon zest and vanilla extract, then whisk until smooth.
  3. Spray a 6” non-stick skillet with cooking spray and place over medium heat. Pour 2½ tablespoons of the batter into the pan and rotate the pan to coat the base evenly.

Perfecting the fruit and yogurt parfait

Layered yogurt and tropical fruit parfait
For a bright and beautiful start to Mom’s day, this yogurt parfait is pretty much perfect.

Cooking time: 15 minutes

1 papaya, peeled, pitted and chopped
1 mango, peeled, pitted and chopped
2 kiwi fruits, peeled and chopped
2 passion fruits, halved
2 cups fat-free plain yogurt
1⅓ cups fruit & nut muesli


  1. Mix the papaya, mango and kiwi fruits together in a bowl. Spoon in the passion fruit seeds using a teaspoon and mix well.
  2. Add Greek yogurt to another bowl. Stir half of the fruit into the yogurt and divide among four serving glasses.
  3. Stir the muesli into the remaining fruit and spoon on top of the yogurt and fruit layer. Serve immediately, or chill until needed. (They keep well for up to a day in the fridge.)
