Baked cinnamon French toast

This childhood favorite is made healthy and delicious with fiber-rich whole-wheat bread. The fresh fruit topping adds the perfect sweet and juicy touch.
4 large eggs
½ cup fat-free milk
2 tsp. sugar substitute
1 tsp. vanilla extract
½ tsp. ground cinnamon
8 (1-oz.) slices whole-wheat bread
Plain fat-free yogurt and mixed berries or other fruit, for serving
*Up to 10 short sprays of any cooking spray are Free. After that, count ½ Syn for every additional 5 sprays
- Preheat the oven to 400°F. Spray a large rimmed baking sheet (or 2 smaller sheets) with cooking spray*.
- In a pie plate, beat the eggs with a fork. Beat in the milk, sugar substitute, cinnamon and vanilla. One at a time, dip a slice of bread into the egg mixture, turning to let it soak into both sides. Place on the prepared baking sheet. Evenly spoon any leftover egg mixture on the bread slices.
- Bake for 18–20 minutes, turning slices once (use a metal spatula as they might stick slightly), until the toast is browned. Remove from the oven and cut each slice in half diagonally. Arrange 4 pieces on each of four heated plates. Top each with some yogurt and fruit. Serve hot.
