Club sandwich salad

This super-filling salad combines all the great flavors of a classic Club sandwich with a creamy, tangy dressing.

-For the dressing:
½ cup (4 oz.) plain fat-free Greek yogurt
1 Tbsp. lemon juice
1 level tsp. yellow mustard
½ level tsp. sugar substitute
¼-½ tsp. coarse ground black pepper
For the salad:
4 slices Canadian bacon, all visible fat removed
1 bag mixed greens
12 baby plum tomatoes, halved
½ hothouse cucumber, halved lengthwise, seeded, and thinly sliced
¼ cup thinly sliced red onion
¼ lb. sliced lean deli ham
¼ lb. sliced lean deli turkey


  1. In a small bowl, mix together all dressing ingredients, then season with salt to taste. Set aside while you prepare the salad.
  2. Preheat the broiler. Place the Canadian bacon on a piece of foil on the broiler-pan rack and broil 3–4” from the heat source, turning once, until browned. Remove from the broiler and cut into small pieces.
  3. Put the salad greens, tomatoes, cucumber, and red onion in a large salad bowl and toss to mix well. Slice the ham and turkey into thin strips and add to the salad with the Canadian bacon.
  4. Drizzle the salad with the dressing and serve.
