This delightful cool and creamy adults-only dessert comes together in minutes but tastes like it took all day. If you don’t have banana liqueur, use a tablespoon of dark rum instead.

Ingredients

1 pack (1-oz.) sugar-free, fat-free instant vanilla pudding mix
2 cups fat-free milk
1 Tbsp. banana liqueur
3 reduced-fat vanilla wafers, coarsely crushed
2 bananas, sliced
2 Tbsp. chopped toasted nuts

Method

  1. In a medium bowl, whisk the pudding mix and fat-free milk for 2 minutes until thickened and smooth. Stir in the banana liqueur, then allow to stand 5 minutes.
  2. Layer half the banana slices at the bottom of four 6-oz. custard cups or wine glasses. Spoon ¼ cup of the pudding over the bananas and top each with a quarter (about 1 heaping teaspoon) of the wafer crumbs. Add the remaining sliced bananas and pudding to each glass, then sprinkle with toasted nuts.
  3. Serve right away or cover with plastic wrap and refrigerate up to 4 hours until ready to serve.
