This delightful cool and creamy adults-only dessert comes together in minutes but tastes like it took all day. If you don’t have banana liqueur, use a tablespoon of dark rum instead.
1 pack (1-oz.) sugar-free, fat-free instant vanilla pudding mix
2 cups fat-free milk
1 Tbsp. banana liqueur
3 reduced-fat vanilla wafers, coarsely crushed
2 bananas, sliced
2 Tbsp. chopped toasted nuts
- In a medium bowl, whisk the pudding mix and fat-free milk for 2 minutes until thickened and smooth. Stir in the banana liqueur, then allow to stand 5 minutes.
- Layer half the banana slices at the bottom of four 6-oz. custard cups or wine glasses. Spoon ¼ cup of the pudding over the bananas and top each with a quarter (about 1 heaping teaspoon) of the wafer crumbs. Add the remaining sliced bananas and pudding to each glass, then sprinkle with toasted nuts.
- Serve right away or cover with plastic wrap and refrigerate up to 4 hours until ready to serve.
