A scoop of creamy mashed potatoes makes a perfect side for roasted meat and veggies.
1½lbs potatoes, peeled and chopped
1 cup fat-free plain yogurt
Salt and freshly ground pepper, to taste
A handful of fresh parsley, finely chopped
- Boil the potatoes for 15-20 minutes or until they can be easily pierced with a fork. Drain and return to the pan.
- Add the fat-free plain yogurt and season to taste. Using a potato masher or a hand mixer, mash until smooth. Taste to check the seasonings and sprinkle with the fresh parsley to serve.
