Warming, filling oatmeal is a great way to start the day. This recipe makes four servings, which makes an easy family breakfast, or simply store the leftover oatmeal in the fridge, reheat, and then top with fresh fruit and yogurt throughout the week.
2 cups water
1⅓ level cups old-fashioned or quick-cooking oats
½ cup plain non-fat yogurt, for topping
Cut-up fresh fruit or berries for topping
4 teaspoons honey (optional, add 1 Syn per serving)
- Put water in a medium saucepan and bring to a boil over medium heat. Add salt to taste, if desired.
- Stir in the oats, reduce the heat and cook, stirring often, until thickened and creamy, 4–6 minutes, depending on how firm or tender you like your oats.
- Divide evenly into 4 bowls and top each with yogurt, fruit and honey, if using.
