Scrambled eggs with smoked salmon

Whether you're celebrating an occasion or just craving something different, this elegant dish really hits the spot. Serve with halved cherry tomatoes or thick slices of beefsteak tomato.
8 large eggs
3 Tbsp. water
1 Tbsp. freshly chopped chives
6 oz. smoked salmon
Wedges of lemon and chive leaves, to serve (optional)
*Up to 10 short sprays of any cooking spray are Free. After that, count ½ Syn for every additional 5 sprays.
- In a medium bowl, beat the eggs, water and chives, and season with salt and pepper to taste.
- Spray a medium ceramic or nonstick skillet with cooking spray* and place over medium-low heat. Pour in the eggs and cook, stirring frequently, until softly scrambled.
- Place some smoked salmon on each of 4 plates and spoon the scrambled eggs alongside. Serve immediately with lemon wedges and chive leaves, if desired.
