Spiced melon medley

Melon balls bursting with freshness are drizzled with delicately spiced syrup in this simple dish—and it's Free!
1 level Tbsp. sugar substitute
Finely grated zest of ½ orange
¼ tsp. crushed cardamom seeds
1 cinnamon stick
1 ripe honeydew melon, halved and seeds removed
1 ripe cantaloupe melon, halved and seeds removed
½ small seedless watermelon
Plain fat-free yogurt or plain Greek yogurt, to serve
- First make the syrup. In a small saucepan, stir together the sugar substitute, orange zest, cardamom seeds, cinnamon stick and 1 cup of water. Bring to a boil over high heat. Reduce the heat to low and simmer gently for 10 minutes.
- Meanwhile, use a melon baller to make balls from the melons and watermelon and divide them among six bowls. (If you don’t have a melon baller, just dice the fruit.)
- Remove the syrup from the heat, discard the cinnamon stick and allow the syrup to cool. Spoon the syrup over the fruit and serve each with a dollop of yogurt.
