  • Ingredients
  • Method

1 level Tbsp. sugar substitute
Finely grated zest of ½ orange
¼ tsp. crushed cardamom seeds
1 cinnamon stick
1 ripe honeydew melon, halved and seeds removed
1 ripe cantaloupe melon, halved and seeds removed
½ small seedless watermelon
Plain fat-free yogurt or plain Greek yogurt, to serve

  1. First make the syrup. In a small saucepan, stir together the sugar substitute, orange zest, cardamom seeds, cinnamon stick and 1 cup of water. Bring to a boil over high heat. Reduce the heat to low and simmer gently for 10 minutes.
  2. Meanwhile, use a melon baller to make balls from the melons and watermelon and divide them among six bowls. (If you don’t have a melon baller, just dice the fruit.)
  3. Remove the syrup from the heat, discard the cinnamon stick and allow the syrup to cool. Spoon the syrup over the fruit and serve each with a dollop of yogurt.
